Alpine natural cuisine in the Schwaigerlehen-Berngarten
The Rauchkuchl is the heart of the over 500-year-old Schwaigerlehen, which is located in Stuhlfelden - in the middle of the Hohe Tauern National Park region - and knows how to tell of past centuries like a picture book. It has been in the family since 1892, and with Tobias Bacher, a man has recently taken the helm again for the first time after three generations of female rule.
A Rauchkuchl, like the one found in the Schwaigerlehen, where people still cook alongside their guests as in days gone by, is a special rarity. One of the special features of the Rauchkuchl is that there is no menu. "This gives us the opportunity," says Tobias Bacher, "to tailor the menu to what the day has in store. In this way, one thing follows the other and by the evening the individual parts naturally come together to form an organic whole. The Rauchkuchl, the Bauernstube and the Jägerstüberl serve their dishes from Tuesday to Saturday, always upon reservation, and Tobias Bacher is happy to present his dishes to the guests himself.
Tobias Bacher knows the aromas of the mountain herbs very well and knows how the vegetables and flowers from the home garden taste. That is why he can rely completely on their seasoning power and do without additional flavourings. This is how nature is found on the plate, unadulterated but refined and refined, which not only gives us strength and energy, but also gives us an impression of the immense variety of tastes as well as flavours and fragrances.
Those who want to experience the Schwaigerlehen in its entirety have the opportunity to move into one of the four farmhouse rooms on the first floor, which are furnished with great attention to detail. Like the entire house, the rooms present themselves like a picture book. When browsing through them, one is lost for words and cannot help but be amazed.
